Recipe Ingredients
To be Grounded:
- 2 pounds of Pork Shoulder chopped into 1-inch pieces
- 6 ounces of Bacon chopped into 1-inch pieces
For the Mixture:
- 1 large Onion diced
- ¼ cup Dried Fruit could be dried cherries, cranberry, apricot or figs
- ¼ cup Sundried Tomatoes, must be dried tomatoes NOT in oil.
- ½ cup Fresh Bread Crumbs
- 4 ounces Genoa Salami cut into ¼ inch cubes (from the deli counter)
- 1 ½ tablespoons of Garlic chopped
- 1 tablespoon Fresh Thyme chopped
- 1 tablespoon Fresh Sage chopped
- ¼ cup Pistachio
- 1 tablespoon Onion Powder
- Salt and Pepper to taste
- 1 teaspoon Cayenne Powder
Recipe Instructions
- Grind the pork with your meat grinder and add all the ingredients and mix well, of course you can use already ground pork shoulder and add finely chopped bacon.
- Sauté the onion in olive oil until light golden brown and refrigerate to add to the filling.
- Mix all ingredients until very well blended.
- Roll them into a cylinder with plastic wrap and refrigerate for at least a couple hours.
Preheat Oven to 400ºF / 205ºC
- Roll them with puff pastry like the chef did in the video and brush them with an egg wash ( 2 whole egg mixed) and bake them in a 400ºF until golden brown and the Internal Temperature is about 155ºF / 68ºC.
