10-12 cups cold water
2-3 sprigs fresh thyme
2 bay leaves
10 whole black peppercorns
2-3 parsley stems (optional, for brightness)
1 tbsp vinegar (apple cider or white vinegar, to draw out the marrow)

A small piece of ginger for a touch of warmth
A few dried shiitake mushrooms for umami depth
Instructions:
Roast the Bones for Depth:
