Recipe Instructions
Preheat Oven to 375°F (190°C)
- Blanch the green beans in boiling water until tender yet crisp, then shock them in ice water to preserve their bright color.
- In a fry pan, cook the diced bacon over medium to low heat until it releases it’s fat making sure you do not burn the lean part of the bacon. In the same skillet, add the mushrooms, salt and pepper and sauté them until they release their moisture and become light golden brown. Add the ham and cook for a couple minutes.
- In another saucepan, melt the butter and whisk in the flour to create a roux and cook it for a couple minutes. Gradually add the milk while whisking continuously for another couple minutes. Add the Brie and the Cheddar, nutmeg and cook at very low heat until smooth and thickened.
- Add the cooked bacon, ham, mushrooms and adjust salt and pepper as needed.
- Combine the green beans ensuring they are well coated.
- Transfer the mixture to a greased 2-quart (2L) baking dish, top with parmesan and bacon bits if desired, and bake for 20 - 25 minutes, or until bubbling and heated through.
- Serve Hot and Enjoy!
Pro-Tips
Perfect Green Beans Every Time
Blanch your fresh green beans in boiling salted water for 2–3 minutes, then immediately transfer them to an ice bath. This locks in their bright color and keeps them tender yet crisp. Dry them thoroughly before mixing them with the cheese sauce to avoid watery results.Bonus Pro-Tip: Mastering the Cheese Sauce
A smooth, lump-free cheese sauce is the star of this dish. Use equal parts butter and flour to create a roux, cook it until lightly golden, and then slowly whisk in warm milk. Once the base is smooth, add cheeses like brie and sharp cheddar in small batches, stirring until melted.Equipment - You can find the items below at our online store!
