I believe the print version here is incorrectly saying in Step 6, to add 90% cacao powder. The cacao powder was added by the Chef to the dry ingredients earlier. Unlikely to affect the taste either way, but there’s no reason to add it in Step 6, after already adding in Step 2.
Would not want someone confused and adding it twice!
