For the Puff Pastry Shells:
- 1 sheet Puff Pastry, chilled
- 2 Egg Yolks
- 1 tablespoon 15ml Heavy Cream
For the Chicken:
- 1 pound 453g boneless, skinless Chicken Breast, diced into bite-sized pieces
- 1 tablespoons Clarified Butter or cooking oil
- 1/4 teaspoon Smoked Paprika
- 1/2 cup Bell Peppers, finely diced (any color)
- 2 ounces Butter plus 1 more ounce at the end
- 1 large Shallot diced very small (if you do not have shallots use a small onion finely diced)
- ยผ cup All-Purpose Flour
- 16 ounces Chicken Stock
- 1/2 cup Heavy Cream
- 1 teaspoon Hot Sauce, adjust to taste
- 2 tablespoons Cream Sherry (optional)
- 1/2 cup Peas
- Salt and Pepper to taste
Recipe Instructions
Preheat Oven to 400ยฐF (200ยฐC)
Prepare the Puff Pastry Shells:

- Using a round cookie cutter cut out 4 @ 4 inches (10 cm) circles. These will be the bases of your shells.

- Continue to cook, stirring, until the mixture thickens and is very smooth, add the hot sauce, sherry and the peas.ย ย
- Season with salt and pepper to taste, turn the heat off and add the remaining butter.ย ย

Chicken ala king is delicious over biscuits! Also, chicken cacciatore is very easy to make but does take a few minutes to blend the flavors together. Either of these dishes will make you the hit of the party.

I made this chicken ala king today it is fabulous, awesome, delicious and my 83 year old mom loved loved loved it!!
I was maybe 10 or 15 in the 70’s and I don’t ever recall getting to eat this
I was wary about the roux and I MESSED UP dumping the flour in the butter before the shallots OMG I just hoped for the best ๐ and I whisked and whisked and whisked n cooked and cooked on low low low not bloop bloop bloop (not burn)
I made double the recipe this is a GREAT recipe
at lot of prep and chopping I did that the day before whisking and not burning the roux was my concern which turned out a non issue
I did not have a reduction sauce pan but it turned out beautiful, just like YOU!!!

Love your video. One note, on your video at 9:26, you add sliced Mushrooms. On your online recipe, you don’t mention Mushrooms. From what I remember, the classic recipe includes sliced Mushrooms. May want to update it.
