Suggested Pairings to Elevate Your Meal
When it comes to pairing Guinness Beer Beef Stew, think hearty and rustic. A robust red wine, like a Cabernet Sauvignon or a Malbec, can complement the rich flavors of the beef and the stout.
If you’re more of a beer enthusiast, a second pint of Guinness beer is never a bad idea. The dark, malty flavors of the beer will enhance the stew’s savory notes, creating a harmonious balance.
For a complete meal, add a simple green salad with a tangy vinaigrette. The acidity from the vinaigrette cuts through the richness of the stew, refreshing your palate between bites.
And for dessert, a slice of Apple Crisp Bread Pudding with a dollop of whipped cream is the perfect ending to this hearty meal.

Recipe Instructions
Preheat Oven to 375°F (190°C)
Step 1. Sear the Meat:
- In a large fry pan, heat the clarified butter. Once hot, add the beef chunks and season them with salt and black pepper. Sear the beef chunks in batches until they have a golden-brown crust from the Maillard reaction. Avoid overcrowding the pan to ensure proper browning.
- Remove the seared beef and set aside.
Step 2. Prepare the Aromatics:
- In a large Staub Dutch Oven or oven-safe dish, sauté the diced bacon over medium heat until it starts to render its fat. Add the chopped onion and cook until light golden brown.
- Incorporate the fresh thyme, rosemary, and sliced garlic; sauté until fragrant.
Step 3. Add the Tomatoes, Guinness Beer, and the Seared Beef:
- Add the drained tomatoes, Guinness beer, leeks, celery, and carrots to the pot. Introduce the reserved seared beef and pour over the beef stock.
- Add the prunes and adjust salt and pepper to taste.
Step 4. Simmer then Slow Cook in the Oven::
- Bring the mixture to a simmer, then cover with a lid. Transfer to the preheated oven and let it cook for about 2.5 hours.
Step 5. Thicken the Stew:
- Around 45 minutes before the stew is ready, remove it from the oven. The beef should start to be more tender but not yet fall apart when tested with a fork.
- Gradually stir in the prepared roux (or enough flour) to thicken the stew to your preference. Ensure the flour is well incorporated.
- Return the pot to the oven and continue cooking until the stew reaches your desired thickness, and the meat falls apart easily when tested with a fork.
Step 6. Serve and Enjoy!
- Serve the stew hot, accompanied by a generous portion of mashed potatoes. Garnish with fresh herbs and, if desired, additional prunes for a unique touch. Here is a link to my Garlic Butter Mashed Potatoes recipe

Beer Beef Stew Recipe FAQs
1. What is Guinness Beer Beef Stew?
Guinness Beer Beef Stew is a hearty and flavorful Irish dish made with tender beef chunks simmered in a rich, dark Guinness beer broth. This stew combines the deep, malty flavors of Guinness stout with savory beef, vegetables, and aromatic herbs, resulting in a robust and comforting meal.
The use of Guinness beer not only adds a distinctive flavor but also helps tenderize the beef, making it melt-in-your-mouth delicious. This dish is a celebration of rich flavors and hearty goodness, often served with mashed potatoes or crusty bread to soak up the delicious broth.
2. What kind of beef should I use for Guinness Beer Beef Stew?
The best cuts of beef for Guinness Beer Beef Stew are those suitable for slow cooking, such as chuck roast, beef brisket, or boneless short ribs. These cuts are rich in connective tissue, which breaks down during the slow cooking process, resulting in tender and flavorful meat.
It’s important to cut the beef into uniform pieces and brown them thoroughly to develop a deep, savory flavor before simmering them in the stew. This step ensures that the beef becomes melt-in-your-mouth tender as it cooks.
3. Can I make Guinness Beer Beef Stew in a slow cooker?
Yes, Guinness Beer Beef Stew can be made in a slow cooker. To do so, brown the beef in a skillet first to develop a rich flavor. Then transfer the beef to the slow cooker along with the vegetables, Guinness beer, beef broth, and seasonings.
Cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and the flavors have melded together. Add any additional vegetables, like potatoes, during the last 2 hours of cooking to ensure they don’t become too soft.
4. Can I make Guinness Beer Beef Stew in an Instant Pot?
Absolutely! To make Guinness Beer Beef Stew in an Instant Pot, use the sauté function to brown the beef and sauté the vegetables. Then add the Guinness beer, beef broth, and seasonings. Close the lid, set the Instant Pot to high pressure, and cook for about 35 minutes.
Allow the pressure to release naturally before opening the lid. This method significantly reduces cooking time while still delivering tender, flavorful results.
5. What vegetables are typically used in Guinness Beer Beef Stew?
Common vegetables used in Guinness Beer Beef Stew include onions, carrots, and celery. These provide a flavorful base and add texture to the stew.
Other vegetables that can be included are potatoes, parsnips, and leeks. Each vegetable contributes its unique flavor and enhances the overall heartiness of the stew.
6. How do you thicken Guinness Beer Beef Stew?
To thicken Guinness Beer Beef Stew, you can use a few methods. One common method is to dust the beef with flour before browning it. Another option is to add a roux (a mixture of butter and flour) towards the end of the cooking process.
Additionally, mashing some of the potatoes in the stew or adding a cornstarch slurry can also help achieve the desired consistency. These methods ensure a thick, hearty stew without compromising the flavor.
7. Can I freeze Guinness Beer Beef Stew?
Yes, Guinness Beer Beef Stew freezes well. Allow the stew to cool completely before transferring it to airtight containers or freezer bags. It can be stored in the freezer for up to three months.
When you’re ready to enjoy it, thaw the stew in the refrigerator overnight and reheat it on the stove over medium heat until warmed through. Note that the texture of some vegetables, like potatoes, may become softer after freezing and reheating.
8. How long does Guinness Beer Beef Stew last in the refrigerator?
Guinness Beer Beef Stew can be stored in an airtight container in the refrigerator for up to 4 days. The flavors often improve after a day or two, making leftovers even more delicious.
When reheating, ensure the stew is heated thoroughly to an internal temperature of at least 165°F to ensure food safety.
9. Can kids eat Guinness Beer Beef Stew?
Yes, kids can eat Guinness Beer Beef Stew. The alcohol content in the Guinness beer cooks off during the long simmering process, leaving behind only the rich flavors. This makes the stew safe for children to enjoy.
However, if you have any concerns, you can substitute the beer with beef broth and a splash of Worcestershire sauce for a similar depth of flavor without any alcohol content.
10. What should I serve with Guinness Beer Beef Stew?
Guinness Beer Beef Stew pairs wonderfully with a variety of sides. Traditional options include creamy mashed potatoes or a slice of crusty Irish soda bread, perfect for soaking up the rich broth.
You can also serve the stew with a side of roasted vegetables or a fresh green salad to balance the meal. For an authentic Irish experience, enjoy it with a pint of Guinness beer.
11. Can I make Guinness Beer Beef Stew without alcohol?
While Guinness beer is a key ingredient in the traditional recipe, you can make a non-alcoholic version of the stew. Substitute the Guinness beer with beef broth, chicken broth, or a mixture of broth and a splash of Worcestershire sauce to replicate the rich, savory flavors.
This version won’t have the same depth as the original, but it will still be a delicious and hearty beef stew.
12. Why is browning the beef important in Guinness Beer Beef Stew?
Browning the beef before simmering it in the stew is crucial for developing deep, complex flavors. This process, known as the Maillard reaction, caramelizes the surface of the meat, adding richness and enhancing the overall taste of the stew.
It also creates flavorful browned bits at the bottom of the pot, which can be deglazed with Guinness beer or broth to add even more depth to the dish.
13. Can I add other ingredients to customize my Guinness Beer Beef Stew?
Absolutely! While the traditional recipe includes beef, vegetables, and Guinness beer, you can customize the stew to your liking. Consider adding mushrooms, peas, or parsnips for additional flavor and texture.
You can also experiment with different herbs and spices, such as thyme, rosemary, or bay leaves, to enhance the aromatic profile of the stew. Just ensure that any additional ingredients complement the rich, savory base of the stew.
14. What kind of beer is best for Guinness Beer Beef Stew?
The best beer for Guinness Beer Beef Stew is, of course, Guinness stout. This dark, rich beer adds a unique malty flavor and helps tenderize the beef. If you cannot find Guinness, any other stout or dark beer can be used as a substitute.
Avoid using lighter beers, as they won’t provide the same depth of flavor. For a non-alcoholic option, beef broth with a splash of Worcestershire sauce can be used instead.
15. How do I prevent my Guinness Beer Beef Stew from being too bitter?
If your Guinness Beer Beef Stew turns out too bitter, it could be due to the beer or the cooking process. To balance the bitterness, try adding a bit of brown sugar, honey, or even some dried fruit like prunes or dried cherries.
These sweet additions can counteract the bitterness and add complexity to the stew. Also, ensure you simmer the stew long enough for the flavors to meld together, which can help reduce any overly bitter notes.
16. Is Guinness Beer Beef Stew gluten-free?
Traditional Guinness Beer Beef Stew is not gluten-free due to the presence of Guinness beer, which contains gluten. However, you can make a gluten-free version by using a gluten-free stout or dark beer and ensuring that any other ingredients, such as flour used for thickening, are also gluten-free.
Substituting the beer with beef broth and adding a splash of gluten-free Worcestershire sauce can also create a gluten-free version of this hearty stew.
17. Can I make Guinness Beer Beef Stew ahead of time?
Yes, Guinness Beer Beef Stew can be made ahead of time. In fact, it often tastes better the next day as the flavors have more time to meld together. Prepare the stew as directed, then let it cool and store it in the refrigerator for up to 4 days.
Reheat it gently on the stove over medium heat, adding a splash of beef broth or water if necessary to adjust the consistency. This method allows the stew to maintain its rich, hearty texture and deep flavor profile, making it an excellent option for meal prep or entertaining guests.
18. How do I store leftovers of Guinness Beer Beef Stew?
Leftover Guinness Beer Beef Stew should be cooled completely before transferring it to airtight containers. Store it in the refrigerator for up to 4 days, or freeze it for longer storage. When stored properly, the stew maintains its delicious flavors and textures.
When reheating, do so gently on the stove or in the microwave, ensuring the stew reaches an internal temperature of at least 165°F for food safety. This stew often tastes even better the next day as the flavors have had more time to meld together, providing a rich and comforting meal every time.
19. How can I make Guinness Beer Beef Stew more flavorful?
To make your Guinness Beer Beef Stew more flavorful, focus on building layers of flavor through the cooking process. Start by thoroughly browning the beef in batches to ensure a deep, caramelized crust on each piece. This step, known as the Maillard reaction, is crucial for developing a rich, savory base. Don’t rush this process; it’s essential for creating the depth of flavor that distinguishes a great stew.
Additionally, use a good-quality beef broth or stock, preferably homemade, to enhance the stew’s richness. Incorporate a variety of fresh herbs such as thyme, rosemary, and bay leaves, and don’t be afraid to add a splash of Worcestershire sauce for an extra umami kick. For a subtle sweetness that balances the bitterness of the Guinness, consider adding a small amount of brown sugar or dried fruit like prunes or dried cherries. These ingredients add complexity and depth, elevating the overall taste of your stew.

Made this today, garlic butter potatoes yesterday, and your beef broth the day before. Really was a treat, very very good, not cheap but worth every penny. Thank you for the experience and your recipe
Chef Jean Pierre, my mouth is watering just watching your video. I can almost smell the aroma. You are AAAMMMMMAAZZING. Thank you so much.
Chef, I made the Beer beef Stew as per your instructions. Turned out amazing. Plan was to use it for a couple of meals thru the week and freeze the rest for later. My wife and I liked it so much it never made it to the freezer.
I made one mistake in making it. I thought the dates I put in it were dried prunes…. yes I should know better, but it turned out great. I will make it again soon due to popular request and see if it is just as good with prunes.
I am retired and roles have switched. My wife does volunteer work and I do the cooking, (poor woman). Your video’s have saved my ‘bacon’, so to speak. Learning lots of great things. I enjoy learning the why. Thanks so much.

Have you tried none alcoholic Guinness?
Chef! I did this today with mash potatoes, it was maybe the best beef stew I cooked this far. Minor adjustments due to availability, on herbs and aromatics i used only oregano and dry bay leaves, and didnt use a thickening agent as it was reduced to perfection. Definately will cook again, it was AMAZING, thank you.
