- 1 cup White Wine (or Chicken Stock if preferred)
- 1ยฝ tablespoons Fresh Thyme Leaves, chopped (or 3 teaspoons dried)
- 1 can (28 ounces) Whole Tomatoes, crushed by hand
- 4 Bell Peppers, all colors, sliced (about 2 cups)
- 1 cup Andouille Sausage, sliced
- 1 Jalapeรฑo Pepper finely chopped (optional)
- 1 ยฝ cup Chicken Stock
- ยฝ cup Pimento-Stuffed Olives, whole or sliced

I made this the week after the recipe came out. I love braises. This is different enough from Chicken Cacciatore that I don’t think of them as the same recipe. The harissa is an absolute must. It makes all the difference in this recipe.
