IMHO, if you want a Millard reaction on the potatoes, do not use the silicone backing sheet. JPโs recipe makes great potatoes, but the potatoes boil in the oil and starch. Metal contact creates the Millard reaction which I have learned from JPโs videos. The silicone matt deters browning.
