1Red Bell Pepper, chopped into medium to small dices
1Green Bell Pepper, chopped into medium to small dices
2Zucchinis, diced
2Yellow Squash, diced
12ozeach Solid White Tuna in Water, drained2 cans
1 ½tablespoonsHarissa sauce or your favorite hot sauce
1cupKalamata Olives, pitted
1cupFresh Basil, chopped
Salt and Pepper to taste
Olive Oil, for drizzling

Recipe Instructions
In a Dutch Oven, heat the Olive Oil, then start by sautéing the onions until they are golden and caramelized.
Add the rice and sauté it for a few minutes until slightly toasted.
Stir in the garlic and thyme, allowing the garlic to become fragrant.
As soon as the garlic becomes fragrant immediately add chopped tomatoes and chicken broth to prevent the garlic from burning.
Add the bell peppers and cook until slightly softened. Stir everything together and bring the mixture to a boil.
Add the zucchini, squash and harissa cover the pot, lowering the heat to a simmer. Cook for 35 minutes, making sure to stir occasionally to prevent the rice from sticking.
Halfway through add your olives.
Final Stage - Add the Tuna
After 35 minutes, strain your Tuna
Add the tuna and mix gently to avoid breaking up the tuna.
Stir in the basil at the end for a burst of fresh flavor.
Plate and Enjoy!
